Everyone keeps their own specialties handy for quick snacks. For us, that includes goat cheese and sundried tomatoes.
This is a great, easy snack. We used some stupid organic pizza crust from whole wheat. It tasted like a salt-lick. It had no flavor, so they added salt.
We recommend BOBOLI - thin crust.
1/2 cup goat cheese. Costco has some, but buy something better. Theirs ends up a bit gritty.
1/2 cup sun dried tomatoes in oil - Costco's is fine.
1 fresh Roma tomato diced (Roma is better because it's not so gooey.)
1/2 red, yellow or orange diced bell pepper
1/2 cup toasted pine nuts*
Layer in order.
Place directly on rack to crisp up the crust.
Bake for 12 minutes at 400 - 2nd level.
Goes great with frozen grapes
*To toast pine nuts, set oven to 350. Spread on cookie sheet - 2 levels down from top.
Watch for 3 - 5 minutes.
